How to Have Adventures at Home-Chasing Happy

Can I just say how much I adore blogs out there that scream positivity and encourage others to do the same? And can we agree that we can all use a little pick me up...oh I don't know, just about every day? One of my favorites is written by Kenzie of Chasing Happy. This girls screams positivity, and you can't help but feel instantly brighter when reading her sweet words of encouragement, looking at what she has created next or when she gives great, relatable advice on how to pretty much live your life better; or some of my favorites, how to blog better. That's why I'm so excited about the piece that she's written for you all today. I know you're going to love her as much as I do!

Hello there, beautiful people! I'm Kenzie from Chasing Happy, a blog about creativity, happiness, and real life. I'm so glad that Chelsea is having me on her blog today--I love meeting new people in blogland! Hi, hi, hi! The thing I love about Chelsea's blog is how much it feeds my wanderlust. I don't know about you, but I'd sell all my stuff to travel the world in a heartbeat, if I could. My husband might have an issue with that, though, so for now I content myself with taking vacations and stalking reading blogs like Chelsea's. But what's a girl to do on a long weekend (like this one!) when it seems like everyone has exciting travel plans? If you're stuck at home like me, here are a few ideas on how to scratch your adventure itch in your own city.

Visit a local tourist attraction

Head to a museum, snap photos of a public sculpture, explore an historic building, or sip coffee at a popular coffee shop. As a local, these little gems might have escaped your notice--but now's your chance to experience them with new eyes. Explore your city with the perspective of a visitor: what's unique about these attractions? What stories would you tell about them "back home?"

Go out for an exotic dinner

One of my favorite parts of any new place is the food. But most cities have exotic food of their own. Here in Nebraska, we've got Indian, Korean, Sudanese, authentic Mexican, Brazilian, Spanish, French... it's a huge variety. And this is Nebraska. If we have it, you have it, too. Probably even more. Treat your taste buds to something new!

Watch a foreign or inspiring movie

Even if you can't go anywhere, you can pretend you did by watching a carefully selected movie. Pick a foreign film to feel like you're in a different country, or rent a travel flick to live vicariously through someone else's adventures.

Start planning

Page through a travel guide and plan your next trip, even if you don't have a date in mind just yet. Anticipation can give you a huge happiness boost, and planning a vacation is a great way to create that excitement.

Have a spa day

Try recreating the typical vacation experiences, like a day at the beach (or pool, locally) or an afternoon of spa treatments (or even just a mani/pedi). The actual activity is probably pretty similar from place to place, so just close your eyes and pretend you're in Mexico.

Book a hotel stay

If all else fails, get out of the house. Reserve a hotel room and fake it. Ask the concierge for recommendations on things to do, lounge in bed and watch TV, order room service... do whatever it is you would if you were really out of town. With a little creativity, even a long weekend at home can feel like an adventure--you just need an open mind and a free spirit. When you think of Asahi, you probably think of Japanese beers but they also have restaurants named Asahi Beer Community Halls around Japan. It is not so much about drinking beer at these restaurants but more of eating meat either by grill or shabu shabu. Our dinner on the first day with the Chan Brothers’ Hokkaido Passion tour was at the Asahi Beer Community Hall Yōyōtei (アサヒビール園 羊々亭) at in the Susukino district of Sapporo, just opposite the iconic Nikka Building.


The thinly sliced pork slices here are really tender and doesn’t have any of that strong “meaty” aftertaste. It is best enjoyed with vegetables and condiments such as their goma or ponzu sauce. Dinner’s not bad in short.



Outside, political parties are trying to pull some votes for the 2013 Upper House Elections.

Kreidler achieves settlement with health insurers - approves 10 more Exchange plans


Insurance Commissioner Mike Kreidler has reached settlements with Community Health Plan of Washington and Kaiser Foundation Health Plan of the Northwest and approved their 10 plans for sale in Washington�s Health Benefit Exchange, the Washington Healthplanfinder.

 Consumers in Washington will now have 41 choices in the Exchange when open enrollment begins Oct. 1. Community Health Plan of Washington (CHPW) will have three plans available in 26 counties.

 Kaiser will offer an additional seven plans in Clark and Cowlitz counties.

 Kreidler said the additional 10 plans meet the same high standards held for the other approved companies. They also ensure continuity of care for Medicaid enrollees and create more competition in the marketplace.

 The Exchange set an initial July 31 deadline for the Insurance Commissioner�s review and approval of plans for inclusion in the Exchange, where subsidies for health coverage will be offered as part of the federal Affordable Care Act.

�We had 31 health plans approved by the Exchange�s deadline. Washington consumers now have an additional 10 quality plans to choose from,� Kreidler said.  �We took the initial deadline seriously, but we also followed our own legal process and it worked. The Exchange cannot delay any further. It must take action and approve these plans by Sept. 5.�

Stellar at 1-Altitude | Dining Above All

The last time I visited Stellar at 1 Raffles Place (OUB Tower) had been a long time ago. It is not the kind of place one visits everyday but rather to celebrate a special occasion and a rather impressive choice if you want a great view (just check the weather forecast first).




The best time to visit is about 6.30 pm – 7.30 pm when you can hang around 1-Altitude, the alfresco bar located on the top of OUB Tower designed by Kenzo Tange. Taller than the Marina Bay Sands and one of the 280m trinity of Singapore, you can be quite assured that you could get a good 360 degrees panorama of Singapore, not just downtown and Marina Bay Sands but also Jurong Island, the Southern Islands, 1-North and Bukit Timah

After getting hyped up with fantastic panorama, we went downstairs to Stellar for our dinner. I was informed that after a couple of years, Stellar might be getting a facelift in the near future. The dinner started off with some really good bread paired with olive oil and balsamic vinegar as well as butter.



Then there was the amuse bouche, a mini starter of Hamachi,sake sorbet and shiso leaf. The combination of the light, herbal shiso leaves, fresh Hamachi and refreshing, mildly sweet sake sorbet was a great start for the meal.



Next up was the Scallop (28.00++ SGD), Open Ravioli of Scallop, Parmesan Custard, Pear and Zucchini Paper. It was a rather unique combination which has succulent, nicely seared scallop covered with layers of thin ravioli served on savoury parmesan custard and cubes of sweet pear. The zucchini paper was sweet and raisin-like. It was one of my favourite dishes for the dinner.



The Bone Marrow (24.00++ SGD) Bone marrow fritters, Crispy porky bits, Parsley salad and sauce gribiche has a more familiar range of flavours. The preparation, for a start, sounded tedious. The bone marrow was dug out and steamed with egg and cream before putting them back into the bone marrow again while the pig trotters was mixed some ingredients before deep-frying them with a coat of breadcrumbs. It was served with a salad sprinkled with crispy pork bits. I appreciate the contrasting textures but flavour wise, it was kind of monotonous.



The other dish that I enjoyed a lot was the Aglio Uni (44.00++ SGD) which is Chef Millar’s re-interpretation of the classic aglio olio. Instead of the usual butter, he uses Smoked Sea Urchin Butter which gives it a rather savoury, mild briny flavour to the pasta not to forget, buttery fragrance as well. The combination of ikuro, chopped leeks, ebi sakura, capellini and sea urchin butter went extremely well with the wood fired king prawns. However, my only gripe with this pasta is that it tends to get overwhelmingly salty towards the end.



The dish that didn’t work for me as part of the dinner menu rather than dish was the Yellow Fin Tuna. The Yellow Fin Tuna (44.00++ SGD), Wood Fired Yellow Fin Tuna, Rissoni, Broadbeans, petit pois and mint with fromage blanc and pickled cucumber on the other hand has a distinct, Mediterranean flavour that doesn’t quite fit the “oriental” taste profile of the preceding dishes. As a standalone dish however I thought it was rather interesting and I enjoyed the rissoni as well as the perfectly grilled yellow fin tuna a lot.



The Yellow Fin Tuna demonstrates how you could configure your menu to your own personal taste. Out of several items featuring a star ingredient, you are given the freedom to pick a number of them to form a 4 – 6 course menu which gives a better value than a la carte orders.



While some of the dishes earlier had a “Japanese” slant, Chef Millar, explained that he actually draws his experience from his Australian roots such as the abundance of fresh uni back in Australia for the Agilo Uni.



Meat Lovers can enjoy a trio of prime meats such as Mutton, Beef and Pork with the Meat Platter (120 – 140++ SGD, min.2 pax sharing). Diners who ordered this get to pick their choice of Studio William Meat Blades as well. Gimmicky in my opinion but these blades are really sharp and great for meat dishes. Our meat platter featured 4 kinds of meat including 2 kinds of beef cuts, Victorian lamb rack and US Yorkshire Pork Rack.


These were served with an array of sauces and condiments as well such Dijon mustard,blue cheese sauce, morey sauce. Foie gras sauce and chili jam. My favourite item in the platter was the Victorian Lamb Rack which was excellent on its own. The meat was very tender, very fragrant with a nice smoky flavour from the grill. Oh, the seasonal vegetables served as side was wonderful too. The US Yorkshire Pork goes quite well with the chili jam which has a distinct cumin taste.



Finally, the meal ended with a sweet bang. The Sweet Experience was a theatrical experience itself as a pastry chef (in this case Chef Millar himself) crafts a beautiful piece of cuisine art on the spot for you. Chef Millar mentioned that he tries to create a kind of magical “Harry Potter” experience for the dinners in the Sweet Experience.



Featured in the Sweet Experience is the Valrhona Chocolate Bomb, Flaming Baked Alaska, Caramel Crème Brulee, Ginger Raspberry Tart, Amazing French Strawberries with rhubarb glacee. The climax of the ‘show’ was the revealing of the valrhona chocolate bomb as warm raspberry sauce was poured on the chocolate globe, hence melting its chocolate dome.



My favourite among the various sweets presented on this dessert platter was the Flaming Baked Alaska with its contrasting textures (and temperatures). Last but not least, for dinners who ordered coffee or tea, you get to enjoy specially crafted truffles such as Mango Sorbet coated with White Chocolate or a Berry Sorbet coated with Dark Chocolate.



Service was excellent, the server, Nicole was very attentive and tries to interact with us throughout the dinner service. While I was fine with the service, some might find it bordering on the line of over-attentive service. Overall, I had to admit that the prices here ain’t cheap, it is easily within the $$$$$ range but if you are looking for somewhere to enjoy the panorama 280 meters above ground with decent food, Stellar is somewhere you can consider. Come October, Stellar would be participating in Restaurant Week too.

Otaru | Le Tao Cheese Cake Lab

Otaru is supposedly known for its pastries and confectionaries as well and there is a cluster of such shops around Sakaimachi. Our tour guide told us that Le Tao chocolates are more popular than Royce chocolates here. Besides chocolates, Le Tao also have a number of shops specializing in cakes to chocolates around Sakaimachi.


My mum and I decided to have cakes at the Le Tao  Cheese Cake Lab (ルタオ チーズケーキ ラボ) Despite its 3.17 rtabelog rating, I though the cheesecakes here are rather decent. We got the Lab Special (840 JPY) which includes two of their signature cheesecakes (Original and Chocolate) and a seasonal cheesecake as well as a cup of coffee.  Their seasonal cheesecake is a Coffee Cheesecake. You would enjoy their cheesecakes if you like a heavier milk flavour and a richer flavour. However, I thought they could be smoother.

Why Passionfruit is the Bomb Dot Com (Plus 5 Membership Giveaways!)

I've been told by legitimate sources that the phrase in the title is still cool to say...so I'm sticking with it. And might I say, a speedy person at that.

Otaru Seaport | 小樽シーポートマーケット

My first meal on the Hokkaido Passion tour with Chan Brothers was at Otaru Seaport (小樽シーポートマーケット) , a restaurant cum market specializes in seafood. The Chanko Nabe Ozeki or Seafood Nabe  was average at best. The seafood which includes king crab and salmon were obviously frozen but the soup was passable. The furikake for the rice wasn’t good because it reeks of MSG. Our tour guide was honest about the food though. In the tour some of the other members purchased more ingredients such as fresh king crabs downstairs. You must be willing to fork out some 20000-40000 JPY for one though.

I can't tell you how excited I am for this! Zsofi Tapas and Bar

There’s a tapas craze going on in Singapore. Not really among Singaporeans but restaurateurs. Month after month you hear about new tapas bars/bistros, and it’s becoming a cliché to start off an article along the line of “tapas bars are sprouting everywhere”.

Zsofi has been around before the hype though. They’ve been around as a tapas bar, dishing out free tapas with any purchase of booze (yay free food!). Now they are venturing into the bistro scene, offering home-style Spanish food alongside the extensive tapas menu.



Though the chefs are Singaporeans, the restaurant stays faithful to the Spanish food culture, while toning down the flavours a little to appeal to both locals and Spaniards.

Trudging through the late afternoon heat in Little India, we reached Zsofi parched. A glass of Sangria cooled us down, ready for the heat of the first dish.



We kicked off the dinner with Pimiento de Padrón, Spanish Padrón peppers (each with a slightly different level of heat) sprinkled with sea salt flakes. Fortunately for us, none was too much to take. Or maybe we just have a high capsaicin tolerance.



The Pan con Tomate is served in an interesting, hands-on manner. Instead of serving chopped marinaded tomatoes on toasts (a la bruschetta), Zsofi leaves cloves of fresh garlic and 2-halves of tomato in the basket of toasts. Before you eat, rub some garlic and tomato on your toast. The full, pungent flavour of garlic stands out easily, so go easy on it.



Though the octopus slices of the Pulpo a la Gallega (boiled octopus served on boiled potatoes, with a dash of paprika) wasn’t ideally springy (I remember hearing it was intended this way), but the natural flavours of the slimy sea creature was retained. I wish the slices were thicker though.



The variety of seafood that comes in the Combinado Mixta Marisco a la plancha is as good as having the sea in a platter. All the quintessential seafood items are in, and you can smell them before they arrive at your table. Apart from the presence of lobster, the dish was simply an honest seafood platter.



It was surprising to learn that the pork selected for Secreto Ibérico is marbled, because it certainly felt tough and dry. That’s all.



Duck and, more importantly, French comes to mind when it comes to confit. Imagine my bewilderment when Pollo was introduced as a chicken confit. The boss quickly explained that this dish was a result of fierce competition between tapas bars in Spain, and the need to innovate and differentiate. 



For dessert, we had Churros con chocolate. Unfortunately, the sticks disintegrated even before I could dip it into the chocolate sauce. The outside were crumbly more than crunchy, and the inside flaky more than pillowy. In the end, I had to deploy a fork just so that I could smother the fragile churros in chocolate sauce.


Zsofi is definitely not new in the tapas scene in Singapore, which is why personally I had expected more from them. Then again, the bistro side is still relatively new, so I believe they are in the midst of ironing out the kinks. Decent place to hang out with friends, but a tad over-priced for what it’s worth.

Upper Boon Keng Road Market and Food Centre

It was my first time visiting Upper Boon Keng Road Market and Food Centre due to another site visit around Kallang.

It is a nice and quaint place (maybe because we visited it slightly off lunch hours). The place wasn’t too crowded and quite a number elderly residents hanging around for beers or a chat.

Penang Fried Char Kway Teow. Not too bad and very affordable. The prawns were fresh and the noodles have a nice smoky flavour. However, I find it a little dry but considering its about 3 dollars for a large serving, it’s really cheap.

The best dish I had here with my friend is the Chicken Biryani from the Roti Prata House. The rice was perfectly cooked and very fragrant and I the accompanying lamb curry was excellent.

The chicken was not bad as well, with a beautiful crispy skin and juicy flesh.

I would love to go back to Upper Boon Keng Road Market and Food Centre one day, heard there is stall with really good Soup Kambing.
